This “Gungmol” version has most of the same ingredients, but also some stock, so it becomes a bit more saucy and stew-like.
It is based ob the recipe the book “The Wok: Recipes and Techniques” by J. Kenji López-Alt, so I don’t have a link that I can share.
Very nice. I like the contrast between the tomato sauce and the feta. (This time my local supermarket didn’t have any ricota salata, so I used feta instead.)
I remember hating aubergines, but since I learned to salt them to draw out some of their water I really like them.
